Achar is a pickled vegetables dish known best within the Nyonya or Peranakan community. Born from a lack of refrigeration in post-war South-East Asia, Achar is usually prepared in large amounts and stored in glass bottles for later consumption as these pickled vegetables taste better as they age. Usually enjoyed as a side dish or condiment along with rice, this pickle is spicy, vinegary, and punchy and meant to stir up the appetite. The mark of a good Achar is in the balance of flavours and crunch. In Malaysia or Singapore, Achar is often served with nasi lemak, a spicy coconut rice dish or to break up the spice and strong flavours for roti and curry.
