This is a naturally fermented chilli sauce that has not been pasteurised or heat treated so as well as being tasty is full of beneficial bacteria.
The fermented chilli and garlic mash is blended with enough apple cider vinegar to provide a nice amount of heat without being crazy hot. Before blending the vinegar is soaked in toasted American oak barrel chips to add complexity and depth of flavour.
Ingredients: Habanero chilli, organic apple cider vinegar, garlic, Himalayan pink salt, xanthan gum*.
Best kept in the fridge but can be stored at room temperature.

* A tiny amount of Xanthan gum is added to thicken the sauce slightly and also keep it from separating. It is a safe, naturally occurring bacteria produced by fermenting sucrose and glucose.
