The best laksas in the world start with pastes made from scratch using the freshest ingredients. These pastes are generally time consuming. One starts by having to chop and pound by hand in a mortar and pestle before frying till aromatic before the other ingredients can be added to a seafood and coconut based broth. Ugly Food & Co have taken the hard work out with this is a super-easy way to make laksa. All you need to do is add chicken, seafood or tofu, vegetables, fresh herbs and noodles.
TO COOK: Sauté paste in a pot until fragrant. Add veggies of your choice, tofu, chicken or seafood and stir through. Add a litre of coconut milk, bring to the boil then let gently simmer for 20-30 mins. Serve with rice sticks, topped with plenty of fresh herbs - shallots, coriander and Vietnamese mint. This paste is quite mild, if you like yours on the spicy side, we suggest adding extra chilli paste to the broth or chilli oil when serving.
