This extremely rare and premium Koshihikari rice by Yuki Tsubaki comes from less than 0.003% of the Koshihikari rice grown in Uonuma region and is used in Michelin starred restaurants and favoured by food professionals and gourmets around the world.
The Yuki Tsubaki Koshihikari Rice is cultivated in Nigata prefecture in an area with heavy snow. The glacier water in the area is renowned for its rich minerals. It is with this high quality water that Yuki Tsubaki grow their rice. The soil is prepared using four times the standard cost and manpower as they wait for the snowmelt to fill the rice fields. In order to maintain the taste of the rice, rice is dried using dehumidified air before it is slowly polished (at a speed three times slower than the normal process) using the latest milling equipment so as not to apply heat during the polishing process.
The final result is a rice that is uniform and glossy. Best cooked in a rice cooker or earthenware pot. A fragrant nice with a natural sweetness, highlight this Koshihikari as the main component of the meal with other complimentary delicate flavours. We suggest a lightly grilled fish, steamed vegetables with miso dressing and a side of pickles.
